Sugar from sugarcane, salt from seawater, perfume from flowers, malaria tests from a drop of blood — all depend on separating mixtures. A mixture has two or more substances that are not chemically combined, so they can be separated by physical methods that use differences in particle size, density, solubility and boiling point.

5.1How can we classify mixtures?

A homogeneous mixture has the same composition throughout — the first and last sip of well-stirred sugar water are equally sweet. Such a mixture is a solution (vinegar = acetic acid in water, soda = CO₂ in water). A heterogeneous mixture is not uniform — sand in water is visible and settles; oil and water form layers. Homogeneous mixture ki composition har jagah ek jaisi hoti hai — achchhe se ghole gaye cheeni ke paani ka pehla aur aakhri ghoont barabar meetha. Aisa mixture solution hai (vinegar = paani mein acetic acid, soda = paani mein CO₂). Heterogeneous mixture uniform nahi hota — paani mein ret dikhti hai aur neeche baith jaati hai; tel aur paani layers banate hain.

Alloys are homogeneous mixtures of metals (or a metal with a non-metal), made to be harder, more rigid or rust-resistant: brass ≈ 80% copper + 20% zinc; bronze ≈ 80% copper + 20% tin; stainless steel = iron + carbon (0.03–0.8%), chromium (16–18%), nickel (10–14%), molybdenum (2–3%). Alloys metals (ya metal + non-metal) ke homogeneous mixtures hain jo zyada hard, rigid ya rust-resistant banane ke liye banaye jaate hain: brass ≈ 80% copper + 20% zinc; bronze ≈ 80% copper + 20% tin; stainless steel = iron + carbon (0.03–0.8%), chromium (16–18%), nickel (10–14%), molybdenum (2–3%).

Activity 5.1: salt + water (A), chalk + water (B) and a few drops of milk + water (C). Shine a laser from the side: the beam is invisible in A but visible in B and C. On standing only B settles; on filtering only B leaves a residue. So A, B and C are three different kinds of mixture — a solution, a suspension and a colloid (see diagram). Activity 5.1: namak + paani (A), chalk + paani (B) aur kuch boond doodh + paani (C). 5.2Solutions and their concentrationविलयन और उनकी सांद्रताSolutions aur unki concentration

A solution = solute (the substance that dissolves, e.g. sugar) + solvent (the substance that dissolves it, e.g. water). The amount of solute dissolved in a given amount of solvent or solution is its concentration. The proportion matters: ORS needs fixed amounts of salt and sugar in a fixed volume of water; a pesticide spray that is too weak fails, too strong harms crops and soil. Dilip Mahalanabis, an Indian paediatrician, developed ORS — it has saved millions of lives. Solution = solute (jo ghulta hai, jaise cheeni) + solvent (jo gholta hai, jaise paani). Di gayi maatra ke solvent ya solution mein ghule solute ki maatra uski concentration hai. Ratio zaroori hai: ORS mein fixed paani mein fixed namak aur cheeni chahiye; pesticide spray bahut patla ho to bekaar, bahut gaadha ho to fasal aur mitti ko nuksaan. Indian paediatrician Dilip Mahalanabis ne ORS banaya — isne laakhon jaanein bachaayi hain.

Solubility aur solubility curves

Solubility = the maximum mass of solute that dissolves in 100 g (or 100 mL) of solvent at a given temperature; that solution is saturated. Solubility of solids in liquids generally increases with temperature, while that of gases decreases (warm soda goes flat). A graph of solubility vs temperature is a solubility curve (Fig 5.6): compound B rises steeply (241 g at 40 °C, 287 g at 60 °C); compound A is almost flat.विलेयता = किसी ताप पर 100 g (या 100 mL) विलायक में घुल सकने वाला विलेय का अधिकतम द्रव्यमान; वह विलयन संतृप्त है। द्रव में ठोसों की विलेयता ताप बढ़ने पर सामान्यतः बढ़ती है, जबकि गैसों की घटती है (गर्म सोडा फीका पड़ जाता है)। विलेयता बनाम ताप का ग्राफ़ विलेयता वक्र है (चित्र 5.6): यौगिक B तेज़ी से बढ़ता है (40 °C पर 241 g, 60 °C पर 287 g); यौगिक A लगभग सपाट है।Solubility = kisi temperature par 100 g (ya 100 mL) solvent mein ghul sakne wala solute ka maximum mass; wo solution saturated hai. Liquid mein solids ki solubility temperature badhne par aam taur par badhti hai, jabki gases ki ghatti hai (garam soda phika pad jaata hai). Solubility vs temperature ka graph solubility curve hai (Fig 5.6): compound B tezi se badhta hai (40 °C par 241 g, 60 °C par 287 g); compound A lagbhag flat hai.

Crystallization

Cool a saturated solution of B (287 g in 100 g water at 60 °C) to 40 °C: only 241 g can stay dissolved, so 287 − 241 = 46 g separates as pure solid crystals (particles in a regular geometric pattern — rock salt, mishri, snowflakes, frost). Crystallization = forming crystals from a saturated solution. It separates a substance from small amounts of soluble impurities and purifies solids; it works because solubility changes with temperature.B B ke saturated solution (60 °C par 100 g paani mein 287 g) ko 40 °C tak thanda kijiye: sirf 241 g ghula reh sakta hai, isliye 287 − 241 = 46 g pure solid crystals ban kar alag hota hai (regular geometric pattern mein particles — sendha namak, mishri, snowflakes, frost). Crystallization = saturated solution se crystals banana. Ye thodi soluble impurities se substance alag karta hai aur solids ko purify karta hai; ye isliye kaam karta hai kyunki solubility temperature ke saath badalti hai.

Activity 5.3 (copper sulfate crystals): dissolve CuSO₄ in warm water with a drop of dilute sulfuric acid (added by the teacher; prevents unwanted reactions) till saturated → filter hot to remove insoluble impurities → cover with a watch glass and cool slowly → large, shiny blue crystals → filter, rinse with cold water, dry (steps). Slow cooling = bigger, better crystals. Salt is made from seawater by evaporating it to a saturated solution and letting crystals form; coastal communities made panga salt (boiling brine) and karkatch salt (sun evaporation). Activity 5.3 (copper sulfate crystals): garam paani mein dilute sulfuric acid ki ek boond (teacher daalein; unwanted reactions rokti hai) ke saath CuSO₄ saturated hone tak gholiye → insoluble impurities hataane ke liye garam hi chhaaniye → watch glass se dhak kar dheere thanda kijiye → bade, chamkile neele crystals → chhaaniye, thande paani se dhoiye, sukhaaiye (steps). Dheere thanda = bade, achchhe crystals. Samudri paani ko evaporate karke saturated solution banakar namak ke crystals banaye jaate hain; coastal log panga namak (brine ubaal kar) aur karkatch namak (dhoop mein evaporation) banaate the.

Distillation

Evaporation gives back the solute but the solvent is lost. To separate two miscible liquids (e.g. acetone + water) or to recover the solvent, use distillation: heat the mixture, the liquid with the lower boiling point vaporises first, the vapour is cooled in a condenser and collected as pure liquid — the distillate. Simple distillation works when boiling points differ by at least about 25 °C: acetone boils at 56 °C, water at 100 °C (set-up). Do miscible liquids (jaise acetone + paani) alag karne ya solvent wapas paane ke liye distillation: mixture garam kijiye, kam boiling point wala liquid pehle vapour banta hai, vapour condenser mein thanda hokar pure liquid — distillate — ke roop mein jama hota hai. Simple distillation tab kaam karta hai jab boiling points mein kam se kam lagbhag 25 °C ka farq ho: acetone 56 °C par, paani 100 °C par ubalta hai (set-up).

Fractional distillation separates liquids whose boiling points differ by less than 25 °C — used in petroleum refineries to split crude oil into petroleum gas (LPG), petrol, kerosene/aviation fuel, diesel, lubricating oil and bitumen. In Kannauj (UP), the “perfume capital of India”, Mitti ka Ittar (smell of first rain) is made by the traditional Deg-Bhapka distillation method. Fractional distillation un liquids ko alag karta hai jinke boiling points mein 25 °C se kam farq ho — petroleum refinery mein crude oil ko petroleum gas (LPG), petrol, kerosene/aviation fuel, diesel, lubricating oil aur bitumen mein baantne ke liye.

Chroma = colour, graphein = to write. Put a black sketch-pen spot on a pencil line 2 cm above the bottom of a paper strip and dip the end in water (water level below the spot). As water rises, the ink splits into coloured spots (Fig 5.15). Paper chromatography separates components because each interacts differently with the solvent and the paper and so moves at a different speed. Uses: dyes in inks and food colours, plant pigments (try green leaves with 2% m/v salt solution). Chroma = rang, graphein = likhna.

Some solids change directly into vapour on heating without melting, and the vapour turns directly back into solid on cooling — sublimation. Camphor, naphthalene, ammonium chloride and iodine sublime. Heat camphor + salt in a china dish under an inverted funnel plugged with cotton: pure camphor deposits on the cool funnel walls, salt stays in the dish (Fig 5.17). Kuch solids garam karne par pighle bina seedhe vapour bante hain aur thanda hone par vapour seedhe phir solid banta hai — sublimation. Suspensions — centrifugation aur coagulation

A suspension is a heterogeneous mixture in which solid particles do not dissolve but stay suspended in the medium (sand, sawdust or tea leaves in water). Its particles are big (> 1000 nm), visible, settle on standing and are removed by filtration. Fine mud that keeps water cloudy needs centrifugation or coagulation. Suspension wo heterogeneous mixture hai jismein solid particles ghulte nahi balki medium mein latke rehte hain (paani mein ret, buraada ya chai-patti). Iske particles bade (> 1000 nm), dikhne wale hote hain, rakhne par neeche baithte hain aur filtration se hat jaate hain. Paani ko dhundhla rakhne wali mahin mitti ke liye centrifugation ya coagulation chahiye.

Centrifugation: spinning a mixture at high speed (like the phugadi/kikli spinning game) — the tubes become horizontal and the centrifugal force pushes heavier particles outward to the bottom of the tube while the lighter liquid stays on top. Used to separate blood into plasma, platelets/WBC and RBC (Fig 5.22), in dairies and chemical industries. The hand-spun paperfuge (cardboard disc + string) does it without electricity — useful for malaria and anaemia tests in remote areas. Centrifugation: mixture ko bahut tez ghumana (phugadi/kikli game jaisa) — tubes horizontal ho jaati hain aur centrifugal force bhaari particles ko bahar — tube ki tali mein — dhakelta hai, halka liquid upar rehta hai. Khoon ko plasma, platelets/WBC aur RBC mein alag karne (Fig 5.22), dairy aur chemical industries mein use. Haath se ghumaane wala paperfuge (cardboard disc + dhaaga) bina bijli yahi karta hai — door-daraaz mein malaria aur anaemia test ke liye useful.

Coagulation: powdered alum (fitkari) added to muddy water makes fine suspended particles clump together; the clumps settle by gravity (sedimentation) and the clear water is removed by decantation or filtration. Alum is the coagulant. Making paneer is also coagulation — lemon juice or vinegar coagulates milk proteins. Coagulation: gande paani mein pisi fitkari (alum) daalne se mahin suspended particles aapas mein chipak kar gucchhe banate hain; gucchhe gravity se neeche baithte hain (sedimentation) aur saaf paani decantation ya filtration se nikaala jaata hai. Alum coagulant hai. Paneer banana bhi coagulation hai — nimbu ras ya vinegar doodh ke protein ko coagulate karta hai.

Colloids

Blood can be separated by centrifugation, yet its cells are invisible and do not settle — blood is a colloid, neither a true solution nor a suspension. Milk, tomato sauce and ice cream are colloids too. Particle size decides the type: solution < 1 nm, colloid 1–1000 nm, suspension > 1000 nm. Colloid particles stay evenly dispersed and do not settle. A colloid has a dispersed phase (the solute-like particles) and a dispersion medium (in which they are spread). Emulsions have both liquid: oil-in-water (milk, vanishing cream) or water-in-oil (butter, cold cream); emulsifying agents (e.g. milk proteins) keep them stable. Khoon centrifugation se alag ho sakta hai, phir bhi uski cells dikhti nahi aur neeche nahi baithti — khoon colloid hai, na true solution na suspension. Doodh, tomato sauce aur ice cream bhi colloids hain. Particle size type tay karta hai: solution < 1 nm, colloid 1–1000 nm, suspension > 1000 nm. Colloid ke particles barabar phaile rehte hain aur neeche nahi baithte. Colloid mein dispersed phase (solute jaise particles) aur dispersion medium (jismein wo phaile hain) hote hain. Emulsions mein dono liquid: oil-in-water (doodh, vanishing cream) ya water-in-oil (makkhan, cold cream); emulsifying agents (jaise doodh ke protein) unhe stable rakhte hain.

5.5Tyndall effectटिंडल प्रभावTyndall effect

The scattering of light by particles is the Tyndall effect (explained by John Tyndall). In Activity 5.1 the beam path was invisible in the salt solution (particles too small), but visible in the chalk suspension and in milk-water (colloid). We see it when sunlight enters a dark room through a hole, streams through gaps in dense trees, in stadium floodlights through mist, and as haze in smoky, dusty cities. Solutions show no Tyndall effect; colloids and suspensions do. Particles dwara light ka scattering Tyndall effect hai (John Tyndall ne samjhaya). Activity 5.1 mein namak ke solution mein beam ka path nahi dikha (particles bahut chhote), par chalk suspension aur doodh-paani (colloid) mein dikha. Ye tab dikhta hai jab chhed se andhere kamre mein dhoop aati hai, ghane pedon ke beech se kirnein aati hain, dhundh mein stadium lights, aur dhuein-dhool wale shehron ki haze. Solutions Tyndall effect nahi dikhate; colloids aur suspensions dikhate hain.

Think as a Scientist. Hypothesis: rapid cooling of hot saturated CuSO₄ in ice gives smaller, less well-formed crystals than slow cooling. Design a test. Think as a Scientist. Hypothesis: garam saturated CuSO₄ ko barf mein tezi se thanda karne par dheere thanda karne se chhote, kam sudaul crystals bante hain. Test design kijiye.
Make one hot saturated solution and divide it into two equal parts in identical beakers (same volume, same starting temperature, both covered). Cool beaker 1 in an ice-water bath, beaker 2 slowly at room temperature (only this variable changes). After the same time, filter, dry and compare crystal size/shape with a hand lens or by measuring the largest crystals. Repeat to check. 5. A cooking oil pack says 1 litre (910 g). Mixed with water, will it form a layer? Which is on top? How will you separate them? Draw the apparatus.5. 5. Cooking oil pack par 1 litre (910 g) likha hai. Paani mein milaane par layer banegi? Kaun upar hoga? Kaise alag karenge? Apparatus ka diagram banaiye.
Density of oil = 910 g ÷ 1000 mL = 0.91 g/mL, less than water (1 g/mL). Oil and water are immiscible, so oil forms a separate layer on top. Separate with a separating funnel: let it stand, drain the lower water layer through the stopcock, then collect the oil. See the labelled diagram “Separating immiscible liquids” above. Tel ki density = 910 g ÷ 1000 mL = 0.91 g/mL, paani (1 g/mL) se kam. Tel aur paani immiscible hain, isliye tel upar alag layer banata hai. Upar "Separating immiscible liquids" labelled diagram dekhiye.
6. Assertion (A): Solutions do not show the Tyndall effect. 7. How would you separate (Table 5.3): mud from muddy water; plasma from blood; naphthalene and sand; chalk powder and common salt; common salt and water; oil from water; pigments of a flower? Give reasons.7. 7. (Table 5.3) kaise alag karenge: muddy water se mitti; khoon se plasma; naphthalene aur ret; chalk powder aur namak; namak aur paani; paani se tel; phool ke pigments? Kaaran dijiye.
Mud from water — sedimentation + decantation/filtration, or coagulation with alum (mud is insoluble and heavy; alum clumps fine particles). Plasma from blood — centrifugation (cells are heavier and go to the bottom). Naphthalene + sand — sublimation (naphthalene sublimes, sand does not). Chalk + salt — dissolve in water, filter (chalk is insoluble, stays as residue), evaporate the filtrate to get salt. Salt + water — evaporation (or distillation if the water is also wanted). Oil from water — separating funnel (immiscible, different densities). Flower pigments — paper chromatography (pigments move at different speeds). Paani se mitti — sedimentation + decantation/filtration, ya alum se coagulation (mitti insoluble aur bhaari; alum mahin particles ke gucchhe banata hai). Khoon se plasma — centrifugation (cells bhaari, neeche jaati hain). Naphthalene + ret — sublimation (naphthalene sublime hota hai, ret nahi). Chalk + namak — paani mein gholiye, chhaaniye (chalk insoluble, residue), filtrate evaporate karke namak. Namak + paani — evaporation (paani bhi chahiye to distillation). Paani se tel — separating funnel (immiscible, alag density). Phool ke pigments — paper chromatography (pigments alag speed se chalte hain).
8. Miscible liquids A (b.p. 60 °C) and B (b.p. 90 °C) are mixed. Suggest a method to separate them and draw a labelled diagram.8. 8. Miscible liquids A (b.p. 60 °C) aur B (b.p. 90 °C) mile hain. Alag karne ka tareeka batao aur labelled diagram banaiye.
Boiling points differ by 90 − 60 = 30 °C (more than ~25 °C), so use simple distillation. On heating, A vaporises first at about 60 °C, is cooled in the condenser and collected as distillate; B remains in the flask. Diagram: distillation flask with thermometer, water condenser (water in at the bottom, out at the top), burner, receiver — see “Distillation set-up” above. Boiling points mein 90 − 60 = 30 °C farq (~25 °C se zyada), isliye simple distillation. 9. Compare evaporation, crystallization and distillation. When would you prefer each?9. Evaporation, crystallization aur distillation ka comparison kijiye. Har ek ko kab chunenge?
Evaporation — heat until all solvent goes; recovers only the dissolved solid, solvent lost, impurities stay mixed. Prefer for a quick, rough recovery of a solid whose solubility hardly changes with temperature (salt from seawater). Crystallization — cool a hot saturated solution; gives pure crystals, impurities stay in solution. Prefer to purify a solid (CuSO₄, sugar, alum). Distillation — boil and condense; recovers the liquid (and leaves the solid or the higher-boiling liquid). Prefer to get pure water or to separate miscible liquids (acetone–water). Evaporation — saara solvent jaane tak garam; sirf ghula solid milta hai, solvent kho jaata hai, impurities mili rehti hain. Crystallization — garam saturated solution thanda karna; pure crystals, impurities solution mein. Solid purify karne ke liye (CuSO₄, cheeni, alum). Distillation — ubaalna aur condense karna; liquid wapas milta hai (solid ya zyada b.p. wala liquid bachta hai). Pure paani paane ya miscible liquids alag karne ke liye (acetone–paani).

(i) The blood cells would settle under gravity in vessels whenever flow slowed — cells would collect in lower parts, block narrow vessels and fail to reach all tissues evenly, so oxygen and nutrients would not be carried properly. (1) Sublimation — heat under an inverted funnel; naphthalene sublimes and collects on the funnel. (2) Dissolving + filtration — add water to the rest; salt dissolves, sand stays on the filter paper. (3) Evaporation (or crystallization) of the filtrate — salt is obtained.(1) (1) Sublimation — ulti funnel ke neeche garam kijiye; naphthalene sublime hokar funnel par jamta hai. 12. Why is distillation effective for separating water and acetone?12. Paani aur acetone alag karne mein distillation effective kyun hai?
They are miscible (cannot be separated by a funnel) but their boiling points differ a lot — acetone 56 °C, water 100 °C, a gap of 44 °C (> 25 °C). Acetone vaporises almost completely before water vapour forms in significant amount, so pure acetone is collected and water stays behind. Wo miscible hain (funnel se alag nahi hote) par boiling points mein bada farq hai — acetone 56 °C, paani 100 °C, farq 44 °C (> 25 °C). Paani ka vapour zyada banne se pehle acetone lagbhag poora vaporise ho jaata hai, isliye pure acetone jama hota hai aur paani bacha rehta hai.
13. Using Table 5.4 (solubility in g/100 g water): (i) mass of KNO₃ for a saturated solution in 50 g water at 40 °C; (ii) a saturated KCl solution made at 80 °C is cooled to 25 °C — what is observed? (iii) effect of temperature on solubility; compare the four salts from 10 °C to 80 °C.13. 13. Table 5.4 (solubility g/100 g paani) se: (i) 40 °C par 50 g paani mein saturated solution ke liye KNO₃ ka mass; (ii) 80 °C par bana saturated KCl solution 25 °C tak thanda — kya dikhega?
(i) At 40 °C, 62 g KNO₃ dissolves in 100 g water → in 50 g water: 62 × 50/100 = 31 g. (ii) Crystals of KCl appear as it cools: solubility falls from 54 g (80 °C) to about 36 g at 25 °C (between 35 at 20 °C and 37.4 at 30 °C), so about 18 g per 100 g water crystallizes out. (iii) Solubility of all four increases with temperature, but by very different amounts (10 → 80 °C): KNO₃ 21 → 167 (+146, by far the most); NH₄Cl 24 → 66 (+42); KCl 35 → 54 (+19); NaCl 36 → 37 (+1, almost unchanged — so salt is obtained by evaporation, not by cooling).(i) 40 °C (i) 40 °C par 100 g paani mein 62 g KNO₃ ghulta hai → 50 g paani mein: 62 × 50/100 = 31 g. (ii) Thanda hone par KCl ke crystals dikhenge: solubility 54 g (80 °C) se ghat kar 25 °C par lagbhag 36 g (20 °C ke 35 aur 30 °C ke 37.4 ke beech), isliye har 100 g paani mein lagbhag 18 g crystallize hoga. (iii) Chaaron ki solubility temperature ke saath badhti hai, par bahut alag maatra mein (10 → 80 °C): KNO₃ 21 → 167 (+146, sabse zyada); NH₄Cl 24 → 66 (+42); KCl 35 → 54 (+19); NaCl 36 → 37 (+1, lagbhag same — isiliye namak thanda karke nahi, evaporation se milta hai).
