Acids, bases aur indicators

Acids taste sour and turn blue litmus red. Bases taste bitter and turn red litmus blue. Never taste lab chemicals — we test them with indicators. Litmus (a purple dye from lichen) and turmeric are natural indicators; methyl orange and phenolphthalein are synthetic indicators. A curry stain turns reddish-brown with soap (a base) and yellow again after washing with plenty of water — turmeric is acting as an indicator. Acids khatte hote hain aur blue litmus ko red karte hain. Bases kadve hote hain aur red litmus ko blue karte hain. Lab ke chemicals kabhi mat chakhiye — inhe indicators se test kijiye. Litmus (lichen se mila purple dye) aur haldi natural indicators hain; methyl orange aur phenolphthalein synthetic indicators hain. Sabzi ka daag sabun (base) se reddish-brown aur khoob paani se dhone par phir peela ho jaata hai — yahan haldi indicator ka kaam karti hai.

Indicator colours to rememberBlue litmus: red in acid. Red litmus: blue in base. Phenolphthalein: colourless in acid, pink in base. Methyl orange: red in acid, yellow in base.
Olfactory indicators (smell changes): onion, vanilla essence and clove oil lose their smell in a basic solution but keep it in an acidic one.

2.2What do all acids and all bases have in common?

Dilute HCl or H₂SO₄ in a beaker with two nails, a bulb and a 6 V battery — the bulb glows. Glucose or alcohol solution — no glow, even though they also contain hydrogen. Current is carried by ions: acids give H⁺(aq) ions in solution, which cause their acidic properties. Bases give OH⁻(aq) ions. Bases that dissolve in water are called alkalis (soapy to touch, bitter, corrosive — all alkalis are bases, but not all bases are alkalis). Beaker mein do keelein, bulb aur 6 V battery lagakar dilute HCl ya H₂SO₄ daaliye — bulb jalta hai. Glucose ya alcohol ka solution — bulb nahi jalta, jabki inme bhi hydrogen hai. Current ions le jaate hain: acids solution mein H⁺(aq) ions dete hain, jo unke acidic gunon ka kaaran hain. Bases OH⁻(aq) ions dete hain. Paani mein ghulne wale bases ko alkalis kehte hain (chhoone mein sabun jaise, kadve, corrosive — sab alkalis bases hain, par sab bases alkalis nahi).

2.2.1Acids and bases in waterजल में अम्ल और क्षारकPaani mein acids aur bases

Dry HCl gas does not change the colour of dry blue litmus, but turns wet blue litmus red. So H⁺ ions form only in the presence of water. H⁺ cannot exist alone — it joins water to form the hydronium ion, H₃O⁺. Mixing a concentrated acid or base with water is highly exothermic: always add acid to water, slowly, with stirring — never water to acid (it can splash and the glass may break). Mixing with water lowers the ion concentration per unit volume — this is dilution. Dry HCl gas dry blue litmus ka rang nahi badalti, par geele blue litmus ko red kar deti hai. Yaani H⁺ ions sirf paani ki maujoodgi mein bante hain. H⁺ akela nahi reh sakta — paani se milkar hydronium ion, H₃O⁺ banata hai. Concentrated acid ya base ko paani mein milana bahut exothermic hai: hamesha acid ko paani mein dheere-dheere hilaate hue daaliye — paani ko acid mein kabhi nahi (mixture chhitak sakta hai aur glass toot sakta hai). Paani milane se per unit volume ions ka concentration ghatta hai — ye dilution hai.

A universal indicator (a mixture of several indicators) shows different colours at different H⁺ concentrations. The pH scale runs from 0 (very acidic) to 14 (very alkaline); "p" stands for potenz (German: power). Neutral = 7; below 7 acidic; above 7 basic. Higher the hydronium-ion concentration, lower the pH. Acids that give more H⁺ ions are strong acids (e.g. HCl); those giving fewer are weak acids (e.g. acetic acid). Common salt (from sea water, or mined as brownish rock salt) is the raw material for sodium hydroxide, bleaching powder, baking soda and washing soda. 2.4.4Are the crystals of salts really dry?

Heat blue copper sulphate crystals in a dry boiling tube — water droplets appear and the salt turns white. Add 2–3 drops of water — the blue colour returns. Water of crystallisation is the fixed number of water molecules in one formula unit of a salt: CuSO₄·5H₂O, Na₂CO₃·10H₂O, gypsum CaSO₄·2H₂O. These crystals are not "wet". Heating gypsum at 373 K gives Plaster of Paris, CaSO₄·½H₂O (two formula units share one water molecule); with water it sets back to hard gypsum. Neele copper sulphate ke crystals sookhi boiling tube mein garam kijiye — paani ki boondein dikhti hain aur salt safed ho jaata hai. 2–3 boond paani daaliye — neela rang wapas aa jaata hai. The pH will **decrease** (below 6) because lactic acid is formed as milk turns into curd.pH **घटेगा** (6 से कम), क्योंकि दही बनने पर लैक्टिक अम्ल बनता है।
12. A milkman adds a very small amount of baking soda to fresh milk. (a) Why does he shift the pH from 6 to slightly alkaline? (b) Why does this milk take a long time to set as curd?12. Doodhwala taaze doodh mein thoda baking soda milata hai. (a) pH 6 se halka alkaline kyon? (b) Dahi banne mein zyada time kyon?
(a) So that the milk does not turn sour quickly — it keeps fresh for longer. (b) The lactic acid formed is first neutralised by the baking soda, so it takes longer for the milk to become acidic enough to set.(a) (a) Taaki doodh jaldi khatta na ho — zyada der taaza rahe. (b) Banne wala lactic acid pehle baking soda se neutralise hota hai, isliye jamne layak acidic hone mein zyada time lagta hai.
13. Why should Plaster of Paris be stored in a moisture-proof container?13. Plaster of Paris ko moisture-proof dabbe mein kyon rakhein?
With moisture it takes up water and sets into hard gypsum (CaSO₄·½H₂O + 1½H₂O → CaSO₄·2H₂O), becoming useless. Nami milte hi ye paani lekar hard gypsum ban jaata hai (CaSO₄·½H₂O + 1½H₂O → CaSO₄·2H₂O) aur bekaar ho jaata hai.

Reaction of an acid with a base to give salt and water. (i) NaOH + HCl → NaCl + H₂O (ii) Mg(OH)₂ + 2HCl → MgCl₂ + 2H₂O (antacid in the stomach). (i) NaOH + HCl → NaCl + H₂O (ii) Mg(OH)₂ + 2HCl → MgCl₂ + 2H₂O Acid aur base ka reaction jisse salt aur paani bante hain. (i) NaOH + HCl → NaCl + H₂O (ii) Mg(OH)₂ + 2HCl → MgCl₂ + 2H₂O (pet mein antacid).
15. Give two important uses of washing soda and baking soda.15. 15. Washing soda aur baking soda ke do-do uses.
Washing soda: (i) glass, soap and paper industries (ii) removing permanent hardness of water (also household cleaning, making borax). Baking soda: (i) baking powder for cakes/bread (ii) antacids (also soda-acid fire extinguishers). Washing soda: (i) glass, sabun aur kaagaz udyog (ii) paani ki permanent hardness hatana (ghar ki safai, borax bhi). Baking soda: (i) cake/bread ke liye baking powder (ii) antacid (soda-acid fire extinguisher bhi).
