NCERT 10.3.1 · Class 12 Chemistry · Chapter 10 · interactive diagram
Parts and what they mean
- Acid hydrolysis of sucrose (सूक्रोस का अम्लीय जल-अपघटन) — Higher energy barrier, so slower at body temperature.
- Hydrolysis by the enzyme sucrase (एन्ज़ाइम सुक्रेस द्वारा जल-अपघटन) — Enzymes, like chemical catalysts, reduce the magnitude of activation energy, so the reaction runs fast under mild conditions.
- Activation energy — acid hydrolysis (सक्रियण ऊर्जा — अम्लीय जल-अपघटन) — NCERT gives 6.22 kJ mol⁻¹ for acid hydrolysis of sucrose.
- Activation energy — with sucrase (सक्रियण ऊर्जा — सुक्रेस के साथ) — NCERT gives only 2.15 kJ mol⁻¹ when sucrose is hydrolysed by sucrase.
- Reactants (अभिकारक) — C₁₂H₂₂O₁₁ + H₂O
- Products (उत्पाद) — C₆H₁₂O₆ (glucose) + C₆H₁₂O₆ (fructose). The enzyme does not change the start and end energies, only the barrier.
- Energy vs reaction coordinate (ऊर्जा बनाम अभिक्रिया निर्देशांक) — Same idea as the catalyst diagram of Chapter 3 (Chemical Kinetics).
