Denaturation of a proteinप्रोटीन का विकृतीकरणDenaturation of a protein
NCERT 10.2.4 · Class 12 Chemistry · Chapter 10 · interactive diagram
Parts and what they mean
- Native protein (प्राकृत प्रोटीन) — Protein in a biological system with a unique three-dimensional structure and biological activity.
- Hydrogen bonds holding the fold (मोड़ को थामे हाइड्रोजन बंध) — These are disturbed by a physical change (temperature) or a chemical change (pH).
- Heat or change in pH (ताप या pH में परिवर्तन) — Hydrogen bonds are disturbed, globules unfold and helices uncoil.
- Denatured protein (विकृत प्रोटीन) — Secondary and tertiary structures are destroyed; the protein loses its biological activity.
- Primary structure intact (प्राथमिक संरचना अक्षुण्ण) — Peptide bonds are not broken in denaturation — only the folding is lost.
- Coagulation of egg white on boiling (उबालने पर अंडे की सफ़ेदी का स्कंदन) — A common example of denaturation.
- Curdling of milk (दूध का फटना/जमना) — Caused by lactic acid formed by bacteria present in milk (change in pH).
